The flavor is simple but it tastes very rich and satisfying. It can be had alone or with cakes, brownies or even fruits. The good thing is it can be customised as per your taste.
You can make this ice cream at home is easier than it looks also sweetness and creaminess can be adjusted as needed. If done right, the texture comes out soft and frothy. This can be made when a quick homemade dessert is needed. It takes little preparation but everyone enjoys it so much.

About Vanilla Ice Cream
Vanilla Ice Cream is quite loved ice cream flavor around the world. It is simple but comforting and gives nice sweet vanilla aroma, made with milk, cream, sugar and vanilla essence. This homemade version taste fresher and creamier than store bought ones.
The texture comes out smooth and soft. It melts slowly if prepared perfectly just like store bought ice cream texture and does not get icy. Using fresh cream makes it richer while milk base keeps it light. Whipping and blending gives frothy consistency. Blending more makes ice cream extra soft.
There are small variations that can be tried with this ice cream. Some people add condensed milk or eggs to make it richer. Just add Just add chocolate chips, nuts or fruits can mixed in for extra flavor. Vanilla essence can also be replaced with vanilla bean paste for stronger aroma. Few drops of other essences can add for small change.
I make this ice cream during weekends or get together. I sometimes add fruit puree for different flavor or add in some nuts sometimes.


Vanilla Ice Cream Ingredients
- Full fat milk – I used for rich flavor and smooth texture. Low fat milk may not give same creamy feel.
- Sugar – I have used for sweetness. Don’t add too much sugar, it can make the ice cream too sweeter.
- CMC – I have used as stabilizer. It just helps in avoiding ice crystals and keeps the ice cream soft.
- GMS – I just added for the creaminess and volume. You can skip if you don’t want.
- Milk powder – I used for richness and milk flavor, also helps in thickening the mixture.
- Corn flour – I just added for thickening the milk, also helps in getting smooth texture without lumps.
- Fresh cream – I have added while blending to make ice cream creamy and light. You can use whipping cream also.
- Vanilla essence – I added for mild flavor and aroma. You can use vanilla extract if you want stronger taste.

How to make Vanilla Ice Cream Step by Step
1.Shown below is cmc and gms. In a mixing bowl add cms and gms first


2.Add milk powder and cornflour. Mix well.


3.Add ¼ cup milk to it. Whisk well so that there are no lumps formed. In a sauce pan take milk and sugar.


4.Mix well. Bring to a boil. Now simmer this for 5 minutes. Now add in the mixed cornflour mix in this and keep mixing.


5.It will thicken immediately. Now boil this for 1 or 2 minutes. Now pour this in a bowl and add in vanilla and mix well. Now cool this down then strain it.


6.Pour it in a shallow freezer safe container and freeze for 3 to 4 hours. Now take it out and use a electric beater or a blender. Add in fresh cream.


7.Blend this for 5 to 6 minutes till the mix gets light and frothy. Pour back, freeze abd repeat the same blending process one more time as well.


8.I divided and poured in 2 containers. Now pour in freezer safe containers,close with airtight lid and freeze overnight. Next day take it from the freezer keep aside in room temperature for 2 minutes then scoop and serve!


Serve chilled!

- Boil milk – I simmer milk well and keep stirring. I usually keep in low flame else it can stick little at the bottom.
- Cooling and straining – I cool the mixture completely before straining. This helps to get smooth ice cream without bits.
- Blending – I blend frozen mix with cream for few minutes till it becomes frothy. This step makes ice cream airy and easy to scoop.
- Freezing – I just freeze for atleast 8 hours or overnight. Proper freezing helps get perfect texture but sometimes I rush little.
Serving and Storage
Serve this ice cream chilled. It tastes good as dessert after lunch or dinner. Scoop immediately after taking from freezer. You can just store the leftover ice cream in airtight container in freezer. It keeps well for 3-4 days.

1.Can I add flavors?
Yes you can add chocolate, mango or strawberry flavor easily once base is ready.
2.Can I skip fresh cream?
You can skip but ice cream will be less creamy and little icy.
3.Why ice cream melts fast sometimes?
It can happen if it not blended properly can cause this.
4.Can I make it with low fat milk?
You can, but texture will be less rich and creamy.
5.Can kids eat this ice cream?
Yes it is mild in taste and safe for kids.

- ½ heaped cup sugar
- ¼ teaspoon CMC
- 1 and ½ tablespoon GMS
- 2 tablespoon milk powder
- 1 and ½ tablespoon corn flour
- ¼ cup fresh cream
- ¾ tablespoon vanilla essence
