Lemon Sarbath is a summer drink that is very popular in Tamil Nadu. It is made using nannari syrup which comes from the roots of the Indian sarsaparilla plant. This syrup is known for its cooling properties and also its unique aroma. When it is combined with lemon juice, it makes a perfect summer cooler drink.

The flavor of the drink is refreshing and not heavy at all. The balance of both is important, else the drink may taste too sweet or too sour. Chilled water and ice cubes makes it more enjoyable to have. This drink has been made for years in many households.

There are small variations in making lemon sarbath at home. Some people add more lemon juice, while some prefer it mildly sweet only. You can add little soda instead of water for a fizzy version also. Adjusting the sweetness and tang depends fully on personal taste. This drink has become common in many homes during summer season.

I usually make this drink in the afternoon when the sun is very harsh. It is very easy to make and does not need much planning also. Just mixing everything together gives a fresh drink instantly without much effort.

  • Lemon – I used for tangy taste. Adjust quantity based on how sour you like.
  • Chilled water – I have used chilled water to mix syrup and lemon. You can use normal water also and add more ice.
  • Ice cubes – I have added to make drink more cooling. You can skip if water is already cold.

  • Lemon juice – I remove seeds and add lemon juice slowly. Adding all at once can make drink too sour. Taste as you go.
  • Water – I prefer using chilled water. Warm water spoils the refreshing effect. If water is not cold, add more ice to make it cooling.
  • Mixing – I mix everything properly so syrup does not settle at bottom. Stir well every time before serving.
  • Sweetness – I taste before serving. Some syrups are sweet, some less, so adjust little syrup or sugar to balance.
