Gummy Bear Popsicle is a very simple frozen dessert where gummy candies are added into a lemon syrup base. Also the lemon juice adds little freshness and balances the sweetness from sugar and candies.
When it is frozen, the gummy bears stays inside the ice and give chewy bites in between. Kids usually enjoy finding the jellies while eating it. I usually make this when I want something very quick and fun without much effort. It hardly takes 10 minutes to prepare though freezing time is more.
This type of popsicle does not contain milk or cream, so it is more like an ice candy and feels more light. It is transparent and colorful depending on the gummy bears used. Different shapes and colors of gummies can be added which makes it look more colorful and attractive.
The lemon sugar water acts as the base and holds everything together after freezing. If too less gummies are added, they may settle at the bottom. Adding more helps them float around slightly and look evenly spread.

Gummy Bear Popsicle Ingredients
- Gummy bears – I have used small packet of jelly gummy bears. It gives color and chewy texture inside the popsicle. You can use any flavor or mixed candies as you like.
- Water – I just added this to form the ice structure around the gummies. You can use chilled water also if needed.
- Lemon juice – I used for tanginess, it just balances the sweetness and gives refreshing flavor.
- Sugar – I just added this to sweeten the lemon water. It dissolves and blends evenly in the base. You can reduce or increase it as per your taste.

How to make Gummy Bear Popsicle Step by Step
1.To a mixing bowl add water, then add sugar.

2.Add lemon juice, mix well until sugar completely dissolves.

3.Now take your popsicle mould, add gummy bears almost till ¾th of each mould

4.Add lemon juice to it till rim of each of mould. Close with lid

5.Freeze for at least 6-8 hours. Then show the mould under running tap water and de mould the popsicles carefully. Pull it out gently and serve immediately.

- Freezing time – I freeze for minimum 6 to 8 hours so it becomes firm. Do not remove popsicles too early.
- Demoulding – I usually do this gently so popsicle comes out easily without breaking. Show the mould under running tap water for few seconds.
Serving and Storage
Serve them immediately after removing from mould. This goes well as an evening snack during summer days. If not serving at once, keep popsicles inside freezer only. They can be stored for few days in freezer without any issue. And just make sure mould is covered properly to avoid ice crystals.

1.Can I use other fruit juice?
Yes you can use orange or mixed fruit juice. Adjust sugar depending on sweetness of juice.
2.Why are my gummy bears settling at bottom?
If you add less gummies they may sink. Add little more so they spread better inside.
3.Can I reduce sugar in this recipe?
Yes sugar can be reduced if gummies are already very sweet. Taste the mixture before freezing.
4.How many hours to set this?
You just have to freeze this for at least 6 to 8 hours to fully set. Longer freezing give better firmness and texture.
5.Can I use bigger moulds?
Yes bigger moulds can be used but freezing time may increase. Adjust quantity of ingredients accordingly.
