If you know me, I love recreating dishes which I have tried in cafes or restaurants. This mayo buns is one such recipe. I have tasted this in a near by bakery and loved it to the core, I had to recreate it.

This recipe is not like your regular buns. It has a chicken mayo topping. Which is then baked to create a bubbly toasted look.

About Mayo Chicken Buns

Mayo chicken buns is a creamy mayo chicken filling topped over fluffy bun and baked to perfection. The pillowy soft buns are topped with a creamy chicken filling and it is baked to golden perfection.

This is perfect to put in your kids lunch box or it will make a great after school snack. The dough and filling can be made a day in advance and stored in fridge. Just like my fried chicken rolls.

The creamy chicken filling is super delicious and when it gets baked the top layer forms a crust like and taste so yummy.

I used my homemade pizza dough as the base and it was so soft, light and fluffy. The top layer is so juicy and creamy which is yummy.

I made the top layer mild because this is my little one’s favourite, but you can add some more chilli flakes and make it super spicy. You can even add some colourful bell peppers to make it super colourful.

Ingredients

  • Pizza Dough – I used my homemade pizza dough as the base and it was so soft, light and fluffy.
  • Chicken – you have to boil the chicken before chopping them and use as topping. Chicken breast, or chicken thigh can be used.
  • Mayonnaise – one of the main ingredient to create the creamy topping. You can use eggless or mayo as well.
  • Seasonings – flavourings like salt, black pepper, Italian seasonings, red chilli flakes, sugar is used.
  • Cheese – use mozzarella cheese or cheddar cheese for the filling.
  • Egg – egg wash is used to brush on top of the buns which prevent the topping make the bun soggy.

Step by Step Pictures

Make Dough

1)Start by making pizza dough. I made a basic pizza dough for the bun. check the recipe for the dough.

Make Filling

2)Add chicken in salted water. Bring it to a full boil, simmer the flame and cook on low for 8 to 10 minutes.

3)Now the chicken must be cooked. Remove from water, set aside for 15 minutes. Chop it into small pieces.

4)Take chopped chicken in a bowl. Instead of chopping, you can shred the chicken.

5)Add in mayonnaise into the chicken. You can use veg or regular mayo.

6)Add in salt, sugar, pepper, chilli flakes, Italian seasoning.

7)Add in grated cheese to the chicken.

8)Mix well and Your topping is done.

Shaping Dough

9)Take a portion of dough. This is for one buns. Use a good amount of the dough.

10) Divide the dough into three equal portions, because we are going to braid the bun.

11)Now roll the dough into rope like. Place them near to each other. This way we are going to braid the bun.

12)Bring the top ends together and stick them well.

13)Now take the far end of the rope and place it over the middle rope. And the first rope over the last one. Start braiding the bread like this.

14)Now the bread is braided well. This helps the bun hold the topping better. Stick the ends together.

15)Swirl the braid to make a roll.

Baking the rolls

16)Place the rolls on a parchment paper lined baking tray or well greased baking tray. Let the buns rise for 15 to 20 mins.

17)During the last 10 mins or rising. Preheat oven to 220 degree C (440 degree F). Take the buns and Brush the top with egg. This prevents the filling make the buns soggy.

18)Spoon some filling on top. Be generous with the filling.

19)Bake for 20 to 25 mins. It will toasty and golden.

20)Serve hot.

Instructions 

  • Make pizza dough as per the recipe and allow them to rise. Let it rise.

  • Take a portion of dough and divide it into three portion. Now roll the dough into rope like, seal the top and start braiding. Swirl the braid to make a roll. Place the rolls on a parchment paper lined baking tray. Let the buns rise for 15 to 20 mins.

  • During the last 10 mins or rising. Preheat oven to 220 degree C (440 degree F).

  • Take the buns and Brush the top with egg. This prevents the filling make the buns soggy. Spoon some filling on top. Bake for 20 to 25 mins. It will toasty and golden.

  • Remove from oven and allow them to cool. Serve.
