Nungu Sarbath is a refreshing cool drink made by mixing nungu with nannari sarbath and served chilled. It is very quick to prepare and needs no cooking at all. The drink looks very appetising on the syrup color and has soft nungu pieces in every sip. It is mostly prepared during summer as this drink isa great thirst quencher.
The taste is mildly sweet with earthy flavor from nannari and soft juicy bite from nungu. Adding little lemon juice gives slight tang which balances sweetness. This is a great alternate to packed drinks and carbonated beverages. You can make this when fresh nungu is available in market, it feels very cooling and light.

About Nungu Sarbath
Nungu Sarbath is a popular street style summer cooler in many parts of South India. Fresh palm fruit is peeled and mashed lightly so it blends well in drink. Instead of blending fully smooth, it is just mashed so you can feel small soft pieces while drinking. That texture just makes it more enjoyable.
Nannari syrup is simply made from sarsaparilla root and has a earthy sweet flavor. When mixed with chilled water and nungu, it becomes very refreshing. The syrup also gives the main color to this drink. If syrup is dark then drink will look dark, if light then color will be lighter.
Lemon juice is optional but I prefer adding it. It just gives slight tanginess and cuts down the sweetness. Ice cubes makes it more chilled and soothing, especially in hot afternoons. The drink is not heavy but still satisfying. It takes hardly ten minutes but feels very special when served cold in tall glass.
I often prepare this as mid morning drink during summer. Everyone at home enjoys it without any complaints.

Nungu Sarbath Ingredients
- Nungu / Palm fruit – I used fresh palm fruit for soft jelly like texture and cooling effect. It give nice bite while drinking, choose tender nungu for best taste and better flavor.
- Nannari syrup – I just added for sweetness and color to the drink. You can adjust the sryup quantity as you want.
- Chilled water – I have added for mixing everything together. It makes the drink light and refreshing, you can add more or less to adjust the taste as you prefers.
- Ice cubes – I added few ice cubes to make it cold and refreshing to drink.You can skip it if the water is already very chilled enough.
- Lemon juice – I just add little lemon juice for tanginess and slight freshness. It balances the sweetness, but it is completely optional if you don’t prefer it.

How to make Nungu Sarbath Step by Step
1.Take the iceapple, peel off the outer skin. Now mash the nungu with a spoon.

2.Take your serving glass – Add nannari syrup first. Then add nungu.

3.Add lemon juice.

- Serve immediately – I prefer serving it just after mixing. If kept for long time, ice may melts and dilute the taste of the drink.
Serving and Storage
Serve Nungu Sarbath chilled in a tall glass with few ice cubes. This goes well as an evening summer cooler or after coming back from sun. It is best to consume immediately after preparing. If needed you can refrigerate for few hours, but fresh taste is always better.

1.Can I skip lemon juice?
Yes you can skip lemon juice if you do not like tangy taste. I prefer adding because it balances sweetness.
2.Can I blend everything together?
You can blend lightly if you want smoother drink. But small nungu pieces gives better texture.
3.Is it very sweet?
Sweetness depends on nannari syrup used. You can reduce or increase as per your taste.
4.Can I make it in advance?
It is better to prepare fresh. If making earlier, keep in fridge and stir before serving.
5.Can I add other flavors?
Yes you can try adding rose syrup or little sabja seeds. It will give slightly different taste and texture.
