These oven roasted potatoes has a garlic-rosemary flavour and has a perfect balance of spices. It is simple, just mix and put in the tray to bake, toss it in the middle and your oven roasted potatoes are ready with less effort. Do try and enjoy!

About Roasted Potatoes

These roasted potatoes are perfect for everyday as these are simple and easy to make. With less effort these come out so delicious that you cannot stop with one. It has a lovely crisp outside with a soft fluffy inside infused with garlic and rosemary flavour.

I love how with just few ingredients these turn out so delicious. There are some tips and tricks I have shared and they work so perfectly. This is one of the simple vegetarian side dish or can be main to add on to your thanks giving table.

Garlic is added whole and sprigs of rosemary is added to infuse the flavour. These potatoes take around 1 hour to get done so we need to avoid burning of spices so add it accordingly.

Roasted Potatoes Ingredients

  • Baby Potatoes – Choose small baby potatoes, rinse it at least 3-4 times to get rid of the mud or dirt. Rinse well and dry it well before using.
  • Garlic – I have added whole garlic cloves without skin, you can add it with skin too.
  • Rosemary – Adding rosemary while roasting gives great flavor but add with the sprig so that they don’t burn.
  • Parsley, Chilli flakes – They are added as seasoning after the potatoes are toasted.
  • Olive oil – The potatoes are tossed in olive oil before baking.
  • Pepper – Crushed pepper is best to use.

How to make Roasted Potatoes Step by Step

1.Rinse ½ kg baby potatoes well, dry them and cut it into half. If the potatoes are big cut into 3 slices.

2.To a mixing bowl add the cut baby potatoes, add 2 tablespoon olive oil along with 1 teaspoon crushed pepper and salt to taste.

3.Mix it well and set aside. Preheat oven at 200 DEG C for 10 minutes.

4.Line a foil or parchment paper on a baking tray. Transfer the potatoes to the tray.

5.Turn all the potatoes to cut side down.

6.Add 2 small sprigs of rosemary along with 6 cloves of garlic.

7.Bake in preheated oven at 200 DEG C for 45 minutes first. Then turn over and bake for the rest 10-15 minutes. So totally it takes around 50-55 minutes.

8.Baked and ready. Prick with a fork to check else bake or few more minutes.

  • Potatoes – Choose firm potatoes. You can use baby potatoes or even regular potatoes cubed.
  • Garlic, Rosemary – Adding whole garlic and sprigs of rosemary helps to avoid burning. Do do not chop and add.
  • Herbs – If you get fresh herbs you can use thyme or parsley for seasoning, it adds great flavour.
  • Important Tip – Keeping the cut side down helps in giving more even roasted potatoes. The side down will get more golden crust so do not miss this step.
  • Baking Tray – You can add the potatoes directly in tray also but cleaning may be tough so I always line parchment paper or foil.

Serving and Storage

Serve it hot as a snack or starter. You can serve as a side dish too.It keeps well in fridge for about 3 days but roast potatoes taste great when its just out from the oven. If from fridge you can reheat to make it crisp before serving.

1.Which potatoes are best for roasting?

I love to use baby potatoes cut into half which is best for oven roasting. However you can use yukon gold or russet potatoes too.

2. Should I boil potatoes before roasting?

It is really not needed. But parboiling helps baking faster. So you can parboil potatoes for 5 minutes then roast in oven for around 30 minutes or until crisp and golden.

3. Do I need to peel the skin of potatoes?

No. The skin adds texture and nutrients. Just wash and scrub well before using.

4. How long is ideal to roast potatoes?

Roast for 50-55 minutes, flipping halfway, until golden brown and crisp at the outside. You can check after 45 minutes then proceed, check by inserting a fork if it is soft then it is done.

5.What oil is best for roasting?

Use oil with a high smoke point like sunflower oil or olive oil or avocado oil.
