About Walnut Kataifi Rolls
This recipe is also known as rolled baklava or rolled kunafa. Sometimes it is also called as Greek walnut rolls, Baklava rolls or Saragli. This is a popular Middle eastern recipe which is also popular in Lebanon.
Kataifi (pronounced kah-tah-EE-fee) is a shredded filo dough also known as shredded phyllo is used to make this walnut rolls. The kunafa dough which is brushed generously with melted butter and stuffed with crushed cinnamon sugar walnuts, rolled into small bite size rolls.
This is baked in a tray and rose and orange blossom scented sugar syrup is poured over it. This makes the most addictive dessert of all time.

Kunafa rolls are such desserts which looks impressive. But the efforts are very minimal. You can alter the nuts used in this recipe as per your liking. Almonds, pistachios are great choice for this rolls.
And instead of butter, you can use clarified butter (ghee) for more nutty taste. Skip orange blossom water and use vanilla extract for more mild aroma.
These kataifi rolls are best served fresh out of the oven, if you want to store them for longer, I recommend adding the sugar syrup just before serving.

Ingredients
- Kataifi – Kataifi is a shredded filo dough also known as shredded phyllo is used to make this walnut rolls.
- Sugar – sugar is mixed with filling and used in sugar syrup.
- Walnuts – I like to use toasted walnuts for the filling. Crush walnuts in a food processor.
- Flavourings – use orange blossom water and rose water for flavouring the sugar syrup.
- Ground Cinnamon – cinnamon powder is added to walnuts to flavour.
- Butter – melt butter and use generously for baking kataifi.

Step by Step Pictures
Pre preparation
1)Preheat oven to 180 degree C (360 degree F). Grease a baking dish with butter and set aside.
Make Filling
2)Take crushed walnuts in a bowl, add in sugar and ground cinnamon and mix well.

3)Mix it really well. This is your filling.

Shaping Rolls
4)Take some kunafa pastry, place it vertical and horizontal. Brush it generously with melted butter over the pastry.

5)Top with some crushed walnuts. You will be using around 2 tablespoon of the nuts mixture.

6)Start rolling from one side, gather the kunafa dough and roll it tight.

7)roll from the other sides. so the sides are sealed.

8)Roll it tight like a bite size roll. Repeat the same for other rolls too.

Baking Rolls
9)Place it on the buttered baking dish. Brush top generously with butter.

10)Place it into the preheated oven. Bake for 30 to 35 minutes. When the rolls are baking, make the sugar syrup.

Sugar Syrup
11)Take sugar, water in a sauce pan and bring it to a full boil. Boil for 3 to 4 minutes until it gets slightly syrupy.

12)Take it off the heat, add in rose and orange water and mix well. Remove it off heat and allow it to cool for 5 minutes.

Serving
13) Once the rolls are baked, remove from oven and pour the syrup over the rolls. Let it set for 5 minutes. Serve hot.

14)Garnish with nuts and serve.

- Instead of walnuts, you can use almonds or pistachios.
- Use vanilla or cardamom in the syrup for more floral aroma.
- Kunafa dough tends to get dry when exposed to air, so always keep them covered with damp cloth.
- Instead of baking, you can air fry too.
